Exclusive Espresso Blend
The Il Barretto Exclusive Espresso Blend has been selected after searching for what we believe is the best. It is roasted and distributed solely for the purpose of Il Barretto and is comprised of certified coffee farms (CoE, HiQ, OCR etc.), located between the tropic of Capricorn and that of Cancer, we cup hundreds of samples every year looking for unique flavor profiles. All our green coffee comes from high altitude Arabica plantations, grown under unique microclimate conditions, and by applying the most stringent coffee cherry processing protocols (wet/dry/honey/wet hull). For decaf we only use organic beans (an all Ethiopia natural processed premium blend): caffeine is extracted by the natural carbon dioxide (CO2) process.
Each blend component is roasted separately under specified roast profiles, carefully designed in a way to emphasize the best flavor attributes of each coffee variety, taking into consideration altitude, humidity and bean size, in order to pronounce the most desirable characteristics (body, sweetness, aromatics, complexity, etc). Our espresso blend is build using no less than excellent coffees, so that each component is able to stand on itself (as a sigle origin espresso), paying attention on every step on the long road the bean has to travel from the tree to the cup. A complex orchestrated effort is required to deliver what we finally aim for: complex aromatics, velvety body, prolonged sweetness, persistent aftertaste, cleanness, refreshing acidity, and balance!
We solely employ heavy footprint Probat drum roasters (L12 & Probatino) known for their ability to consistently deliver clean, uniform roasts with full aromatics. Roasted coffee beans are stored in triple wall bags equipped with one way degassing valve (fresco system). We guarantee optimum coffee freshness by roasting date (packaging occurs hours after roast), which for espresso is between the 5th to 15th day post roast! We never use Robusta beans, past crop or below specialty labeled coffees. Out of the best 1% of total coffee production we only buy beans that we can trace back to the coffee farm that produced them, and obtain a detailed report for the variety, picking method, processing and storage before shipment.
